Happy Bundt Day everyone!
In honor of the occasion, I tapped my wonderful wizard cook of a husband to make us a bundt. I also want one of the “I like big bundts” buttons that the Food Librarian is giving away for the occasion.
Upon hearing of his commission to make a bundt, Bookman immediately decided that he would attempt a vegan tunnel-of-fudge. His first obstacle was the pan. I know we had one once, but not having had a bundt since we went vegan 18 some-odd years ago, the pan went missing. Bookman found that Target was holding it hostage. He paid the ransom and brought it home. Curiously, this is not the first item we have had to ransom. In September he discovered that Home Depot had kidnapped our hammer. Hopefully we have seen the last of the kidnappings for ransom, but keep alert so you don’t become a victim too!
Back to the bundt. Not being able to replicate the gooey fudge center with vegan items, he went for an old-fashioned chocolate cakey center. So instead of fudge we can call it a tunnel of chocolate. Take a gander:

You are too funny Stephanie … love the idea of target kidnapping your pots! This looks fantastic … I’ve always been nervous about cakes sticking to fancy shaped pans. Have made jellies (jello to you?) cos you can dip the pan in hot water for a second or two to loosen the insides but a cake. Nervous, nervous. Oh like bookman’s blog.
Those pesky domestic appliance kidnappers! Why don’t we hear more about this on the news? It’s a conspiracy, right?
The bundt looks amazing. I don’t expect they’ve managed to come up with a sugar-free one yet, have they? Sigh.
Hmm. I love bundt. I had no idea there was an entire day devoted to bundt! Next year I am totally celebrating this. Your Tunnel of Chocolate looks pretty divine.
Beautiful bundt, wish I could taste it. To make the hostage rescue more worthwhile, for all the ransom you’ve paid, you should start an “Everyday’s a Bundt Day” campaign, Stefanie… and maybe a foodie blog, with the help of Bookman?
It looks fab and I would give it a go but I’ve never seen potato starch or canola oil here. I’ll have to look in the health food shop.

Sandwich Lady, I wondered that too. Apparently because the pan is curved, the horseshoe formed all on its own.
whisperinggums, I have to give credit to Bookman for the kidnapping discovery. He’s a funny guy! The cake was a bit hard to get out of the pan and had to be gently coaxed.
Litlove, I am sure Bookman things it’s a conspiracy! Can you have molasses or agave as a sweetener? Bookman is interested in taking up a sugar-free challenge.
wherethereisjoy, the cake tastes delicious. I only discovered bundt day last year after the fact. I believe it has only been in existence for about five years or so.

I’m not sure Bookman or my waistline would like an everyday is bundt day campaign! I’m just waiting to hear what houeshole item we will have to ransom next. As for a foodie blog, I’ll leave that one up to Bookman.
Katrina, you can totally make substitutions of corn starch or whatever sort of starch you generally use and any kind of vegetable oil that doesn’t have a strong flavor.
Rebecca, a chocolate ganache topping was added later. Oh, so delicious!

I wonder if that’s where my missing socks go? Yummy looking bundt! I still need to try the chocolate chip cookies your Bookman shared a couple of week’s ago! The recipe that is, had it been a real cookie it would be long gone.

The Bookman has a gift!
I am reminded of that one scene in My Big Fat Greek Wedding where the non-Greek parents bring a bundt cake to their first meeting with the bride’s parents [the engagement party]. Oh it is hilarious. The mother trying to pronounce “bundt”….. they have no clue what it is. What a great movie.
