I was going to blog last night to tell you about my Thursday but Friday laziness took over. Plus, our internet wasn’t working so that kind of makes a nice excuse too.
What was so special about Thursday?
That is a birthday cake. Chocolate molasses with peanut butter frosting. It made getting another year older not so very bad. I’m not one of those people who frets about her age. Most of the time I don’t even remember how old I am. But now and then it surprises me and I have a moment of, “oh dear, when did that happen?” It never lasts long though and soon I am on my merry way again.
So, Thursday was my birthday. I mentioned already that Bookman gave me an iPad over the weekend so I had time to play with it. On the day itself we went out to breakfast. We love going out to breakfast in case you have not cottoned on to that yet. The day turned out to be sunny and a warm, warm in Minneapolis terms, 55F (12.8C). So we ran around doing gardening prep things like getting some seed starting soil and seed pots and a new rain barrel and untreated boards to build two small raised beds for growing blueberry bushes in. It might not sound like a fun way to spend a birthday, but I had a great time and so did Bookman and that’s what counts.
And through the day I got emails and phone calls and there were cards and a few gifts in the mail too. What more could one want?
Oh, and that cake, soooo good. Bookman was kind enough to post the recipe in case anyone would like to try it. The original recipe was cupcakes from Simply Vegan but Bookman has altered it over the years. You really taste the molasses in this cake so if you aren’t a fan, then you will not like it. The peanut butter frosting was delicious. I think we have also made this in the past with a German chocolate cake frosting (mmm coconut) and a plain chocolate frosting that makes the cake incredibly rich. I bet this would also taste really good with a berry topping like strawberries, cherries, raspberries or blueberries. Enjoy!
