Hello Everyone! I hope your holiday celebrations are off to a good start!
Friday the 21st James (aka Bookman) and I celebrated Solstice. As many of you know, James does the cooking all year but the Solstice belongs to me. This year it was like old times when James had to spend the day at work and I was left to my own devices in the kitchen. I have gotten lazy these last number of years because he has managed to have the day off and could help me in the kitchen. Meals got elaborate and complicated. Without his help this year I scaled waaaay back.
The main meal was a simple green salad and green bean with onion rings casserole. I have never had green bean casserole before in spite of it being a midwestern thing. It requires cream of mushroom soup and everyone uses dairy. The homemade non-dairy cream of mushroom soup in this recipe was incredibly easy and took hardly any time at all. About a third of the green beans we used came from our garden; we had them in the freezer from summer.When I told people what I was making for Solstice they would look at me expectantly and want to know what else was going with the casserole. All these folks ate meat and are used to having this dish as a side, but you know what, there is absolutely no reason why it can’t be the main course! It was not only delicious but filling as well.
About those onion rings on top. Wow. We’ve made our own baked onion rings before and they were good, but these, oh these are now going to be our go-to onion rings. Made with a flour and non-dairy milk batter and then dipped in panko bread crumbs spiced with garlic and smoked paprika, you bake them for thirty minutes and they come out of the oven wonderfully crunchy.
Now dessert, baked bananas. Sweet without adding sugar, and oh so tasty. I used homemade hazelnut butter in the batter and fresh chopped medjool dates sprinkled on top. Then, because this dish begs for ice cream, I topped it with chocolate sweet potato nice cream. Yup, I know that sounds really weird and I had my doubts as did James because he is not a fan of sweet potatoes. BUT, get white sweet potatoes and you will have no regrets. This was chocolatey and creamy and made enough so we had leftovers, which did not last long. Best of all, because the whole dessert was naturally sweet fruit and vegetables with only a tablespoon of maple syrup added to the nice cream, it is 100% guilt-free and doesn’t leave you feeling heavy and sorry for the indulgence.Peace and love to everyone this holiday season!
Every year I am looking forward to the view of your plates. A feast in itself. You are way ahead of me in skills, looking at that dessert I never would have thought of this combination.

Cath, the dessert combination was a risk since I have had neither before. But, while I find managing all the cooking pieces a challenge, I am pretty good at figuring or imagining flavor combinations that will go well together. That’s why the rest of the year I am the one who does most of the meal planning even if I am not the one to cook it π

A belated Happy Solstice. I like to try different things. I never had Green Bean and Onion Ring Casserole but it looks very good.

I always enjoy reading about your yearly menu. Another one that sounds like it was a hit. I am curious about the homemade hazelnut butter. Hope you had a lovely solstice celebration. Wishing you and Mr. Bookman all the best in the new year!

Thank you for the good wishes Iliana! I hope the same for you and your family! The hazelnut butter is delicious, naturally sweet and was easy to make. All you need to do is buy hazelnuts, roast them for about 20 minutes in the oven and then blend in a food processor or high powered blender until smooth. I was going to make my own nutella but I liked the plain nut butter so much I decided to not add chocolate π

Thank you Arti! I love my Leuchtturm and I am glad you like them too! So much nicer than Moleskines I think. What about fountain pens? Do you use them? The green bean and onion ring casserole sound delicious. I love onion rings. I’ve never heard of white sweet potatoes. My curiosity is piqued. Today will be spent at my sister’s with too much food. But there will be at least two casseroles (mushroom/ barley and lentil) and lots of veggies for the two vegetarians, one of whom is only 6, and, this year, two vegans! That’s one more than last year!

Joan, the casserole was good and made a lot so now I am enjoying leftovers though it is time to put some in the freezer because a person can only enjoy it for so long. Oh yes, there are white, orange and purple sweet potatoes and they all taste different. The white ones are very mild so take up flavors nicely. I hope you enjoyed celebrating at your sister’s! A Barley and lentil casserole sounds sooo good, two of my favorite foods together in one dish! And sharing it with a 6-year-old vegetarian makes it even more special.

That sounds so good! I have made banana ‘ice cream’ before and it was so good, especially with chocolate! I’m curious about the potato cream…

Daphne, the guy who runs the website where I got the recipe is big into “nice cream” and he has all sorts of interesting ones I am planning on trying particularly when summer arrives. Banana ice cream is a favorite of mine for sure, but this sweet potato one is giving bananas some competition!
